Shore excursions?

The great debate for our upcoming cruise is the shore excursions. Do we book through the cruise line, wait until we get to port and see what there is to see (aka ask a local), or do we research and call ahead and make our own plans? We're doing a little bit of all three of these things on our 6 day cruise coming up. In Ocho Rios (the first port), we plan on booking our own day excursion for the families traveling with us to the Beaches in Ocho Rios. The pricing is great considering it includes food and drinks and there is plenty for the kids to do. My only hesitation with this is the transportation, we'ev experienced life on island time and while it is amazing, we don't want to miss the boat leaving port at 5pm! In the Cayman's the guys plan to scuba dive so I will lead the group of wives and kids in something fun, probably the beach right near the port. I've always wanted to go to Grand Cayman so I can't wait to see the water there! In Cozumel I think we'll just be taking it easy but who knows what we'll get in to.
